Potatoes Lyonnaise

3 large Russet potatoes, peeled and cubed
2 small onions, sliced
2 tablespoons margarine or butter
2 cloves garlic, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Combine all ingredients in a deep 3-quart microwave-safe casserole dish. Cover with microwavable plastic wrap and microwave at high for 9 to 11 minutes, or until potatoes and onions are tender, stirring every 5 minutes. Let stand 5 minutes before serving.
Makes 6 servings.
