1 large cuke (about a pound)
1 bunch of raddishes
1/4 cup cider vinegar
1 1/2 tablespoons of sugar
1 tablespoon of vegetable oil
Peel the cukes first! Then slice lengthwise into two pieces. Then slice the cuke half into 1/4 inch pieces. (cut crosswise)
Cut each raddish into 8 wedges.
Bring vinegar, sugar, 1/4 teaspoon salt, 1/8 teaspoon pepper to boil in a small saucepan. Stir the pot until the sugar has dissolved. Then stir in the oil.
Pour the mixture over the cukes and raddishes in a bowl and stir. Let it stand for 10 minutes. Stir and season with salt before serving.
Salad is especially good when it is served chilled.
