Southwest Macaroni Salad

What You’ll Need

  • 1 pound penne, ziti, or other medium pasta shape
  • 1 (16-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) package frozen corn, thawed
  • 2 cups (about 1 pint) cherry tomatoes, halved
  • 1/2 cup finely diced red onion
  • 1 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tablespoons chopped fresh cilantro
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

 

  1. In a large pot of boiling salted water, cook pasta to desired doneness; drain, rinse under cold water, and drain again.
  2. In a large bowl, mix together remaining ingredients; stir in pasta. Cover and chill for about 1 hour.
