We found this recipe in Southern Living Magazine, and with Shavuot not too far off, we thought now was a good time to share it:
1 cup sliced almonds, divided
1/4 cup all purpose flour
4 tilapia filets
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons olive oil
Process 1/2 cup of almonds in a food processor until finely chopped. Combine with 1/4 cup flour in a shallow bowl.
Sprinkle fish evenly with salt then dredge the fish in the almond mixture.
Melt the butter with olive oil in a large, heavy skillet over medium heat. Add the fish. Cook the fish for four minutes on each side or until golden. Remove the filets to a serving dish.
Add remaining 1/2 cup of almonds to skillet. Cook. Stir often. Do this for about one minute or until golden. Remove almonds with a slotted spoon and sprinkle over the fish. Serve. Wait for oohs and ahhs from your table mates…………..
