This has got to be one of the best kugels I have tasted in a long time. Some Passover kugels are a hit and some are a miss. This one is an outrageous hit! It’s been tested on several “guinea pigs” and they LOVED it! Enjoy! A happy, healthy and kosher Pesach to y’all!

4 matzos
6 eggs, separated
1/2 cup sugar
3 Tablespoons cinnamon
6 grated apples (I like to use Granny Smith and Rome apples or gala)
1/4 cup melted margarine
Cinnamon Sugar
Break matzot into small pieces in a colander. Soften with warm water. In a separate bowl, mix egg yolks, sugar, cinnamon, apples and margarine. Mix in matzot. Whip egg whites until stiff. Fold into the matzo mixture. Place
in an 8 inch square baking dish. Top with cinnamon sugar that had been previously mixed together. Bake at 350 for about 45
minutes. Makes about 8 servings.I doubled this recipe easily and put it into a 13 x 9 baking dish. It can be frozen as well.
