A Great New Way to Celebrate the Joys of Frying for Hanukah!
Zuchini Latkes
Ingredients:
5 zuchini, washed and grated
1 onion, grated
4 to 5 eggs
1/2 cup flour
1 tsp salt
1 tsp nutmeg
Rinse the grated zuchini in a colander. Squeeze out the excess water. Put in large bowl. Add grated onion, eggs, four, salt and nutmeg. Mix by hand, until well blended. (Start with 4 eggs, if the mixture seems too dry, add a 5th egg. Also, if the mixture is too loose, add a bit more flour; it’s a forgiving recipe.)
Heat oil in a frying pan until very hot. Drop large spoonsful of mixture into the oil. Fry until golden brown, flip and fry again until that side is golden brown.
Drain on paper towels. Can be kept warm in the oven if needed.
These are a sure-fire hit! Extremely yummy! Enjoy.
