Mini Potato Knishes

A wonderful appitizers. They’ll be begging for more (and for the recipe!)

3 cups mashed potatoes
2 eggs, slightly beaten
2 tbsp Margarine
1 tsp salt
1/8 tsp pepper
3/8 cup matzah meal
1 egg yolk beaten with 1 tbsp water
oil for baking sheet

In a bowl, combine mashed potatoes with eggs, margarine, salt, pepper, and matzah meal. (may saute a diced whole onion until nice and
brown, then add to mixture, if desired) Form into walnut-sized balls. Brush with diluted egg yolk

Place on baking sheet(greased!) and bake in pre-heated oven at 400 degrees Farenheit for 20 minutes or brown.

These freeze very well. Defrost and reheat on a cookie sheet.
