Whoever heard of boiling meatballs? I didn’t until I found this recipe. It’s become a family favorite. (Note: In our house it isn’t Passover if these are not served)
3 Eggs
3 lbs Ground Beef
Bread Crumbs or Matzah Meal
1/2 tsp each:
garlic powder
onion powder
pepper
To make:
Mix the crumbs/meal in with the meat, eggs and spices. Mix well.
Shape meat into meatballs — not too small as they boil down a bit.
Boil water in a soup pot. (Fill pot half full of water)
Boil for 20-30 minutes. Skim fat off the top.
Add the following:
32 oz tomato sauce
2 cans tomato paste
1/2 C brown sugar
1/2 C White sugar
5-8 Tablespoons grape jelly
4-6 Tablespoons lemon juice
Gently boil until meatballs are done.
Ok, this is a forgiving recipe. You can play with it. Add more tomato sauce if you need, or more sugar, you have to taste it as you go. This is well worth the effort! Serve over white rice if desired.
