In a Midtown neighborhood where pizza is scarce, Joey Allaham, who owns Solo, a kosher meat restaurant in the Sony building, is opening a little takeout pizzeria with a singular product: kosher pies with dairy products but no meat. Overseeing the baking is Giulio Adriani, a certified Neapolitan pizzaiolo who is the chef and owner of the Forcella restaurants.
Finding flour** and San Marzano tomatoes that were kosher was a challenge, Mr. Adriani said, but the mozzarella and ricotta are made in-house. The 10-inch pizzas are baked to order in a wood-burning oven; classic margherita heads a list of more than a dozen varieties. It’s worth the splurge for the truffle, made with ricotta, arugula, pecorino, high-quality truffle oil and, while they last, shaved black truffles ($38).
In a few months, Mr. Allaham plans to convert Solo into a kosher dairy restaurant. (Opens Monday): 550 Madison Avenue (56th Street), (212) 602-1808.

** Hard to find kosher flour??? Frankly here in the NY area it is almost impossible to find flour that is NOT kosher!
