A DIFFERENT JAMBALAYA

WE LOVE Jambalaya. We even love Hank William’s rendition of the song. As buying kosher jambalaya is almost impossible, we make our own. Here is a recipe from World Harbors Sauces (Kof-K) for Maui Mountain Jambalaya:

1 to 1 1/2 pounds of boneless chicken breasts cut into strips
2 Tablespoons of vegetable oil
1 medium onion chopped
1 green bell pepper chopped
1 cup of uncooked rice
1 cup of Maui Mountain Hawaiian Sweet ‘n’ Sour Sauce
1 3/4 cups water
salt and pepper

Season chicken with salt and black pepper and saute for 2 to 3 minutes in hot oil over medium/high heat until golden on all sides (about 3 to 5 minutes). Add chopped onions and green pepper and saute for 2 to 3 minutes.
Stir in the rice, the sauce and water and bring to a boil. Reduce heat to low. Cover and simmer for 30 minutes until rice is tender.
