Kosher salt is all the rage these days. Many cooks love the larger crystals of kosher salt and prefer it for many recipes. Those of you who eat the large doughy pretzels with salt on top or a salt bagel certainly know that the large crystals deliver a really nice snap to the mouth. But did you know that not all kosher salt is the same?
Kosher salt weighs less than table salt by volume due to the way in which it is made. Therefore, when substituting kosher salt for regular salt in a recipe, you have to adjust the amount of salt depending upon which kosher salt you use.
If you are using Morton’s Kosher Salt, increase the amount you use in a specific recipe by 50%.
If you are using Diamond Crystal Kosher Salt, increase the measure by 100%.
These conversions refer to amounts called for in a recipe and not the “mir schit arein” school of cooking. If your recipe calls for a teaspoon, use one and a half of Morton’s and two of Diamond Crystal.
That’s the price you pay for being everyone’s current fad!
