Recently, the NY Times did an amazing expose of a large scale scandal in the fish market. As Gilbert and Sullivan put it so well, “things are seldom as they seem, skim milk masquerades as cream.” And so, too, in the fish market where cheaper fish is often substituted for more expensive fish as well as other scams.
