CUMIN SPICED BURGER WITH HARISSA MAYO
3 pounds chopped meat (chuck is best)
Kosher salt
freshly ground pepper
1/4 cup plus two teaspoons of harissa
2 1/2 teaspoons of ground cumin
2 teaspoons garlic powder
1 teaspoon dried thyme
1 red onion sliced 1/4 inch thick
1 tablespoon extra virgin olive oil
1 cup mayo
1 teaspoon caraway seeds
tomato and cucumber slices
Buns!
In a large bowl, mix the meat with one tablespoon of kosher salt, 1 teaspoon pepper, 2 tablespoons plus 2 teaspoons of harissa, the cumin, garlic powder and thyme. Form the meat into 1/4 inch thick oval patties.
In a medium bowl, toss the onions with the olive oil and season with salt and pepper. Cook the onions over moderate heat, turning once, until tender- about ten minutes. Cover and keep warm when done.
Grill the burgers over moderately high heat, turning once until medium, about 8 minutes. You might want to grill the buns, too.
Meanwhile, mix the mayo with the caraway and the remaining harissa, season with salt and pepper.
Spread the mayo mixture on the bun. Top with a patty, onion, cucumber, tomato and the top of the bun.
Pour an ice cold brewski, and voila! What a Memorial Day BBQ treat!
