HAWAIIAN YAMS

Yams, Hawaiian-Style Recipe

Ingredients
2 cans (1 lb, 2 oz each) yams or sweet potatoes, drained
1 can ( 8.5 oz) crushed pineapple
1/2 cup melted butter or pareve margarine
1/4 cup granulated sugar
1 teaspoon cinnamon
1/2 cup coarsely chopped pecans
1/4 cup light brown sugar (packed)
Preparation

1. 1. Slice yams into 1/2-inch thick pieces. Combine with pineapple, butter/margarine, sugar and cinnamon in 2-qt casserole. Microwave at high 4 minutes. Stir.
2. 2. Sprinkle top with pecans and brown sugar. Microwave at high 2 to 4 minutes. If dish is not hot and topping not melted after 2 minutes, rotate dish 1/4 turn before continuing to microwave.
3. Makes 6 to 8 servings
4. Note: If desired, yams may be mashed with the first 4 ingredients, then cooked. Finish with brown sugar nut topping and continue to microwave as above.
