This comes from Chef Tali in Jerusalem. She says it is always a hit at her table!
4 cups of cubed watermelon (it’s about a quarter of a watermelon)
2 cups of cut up Kirbies
1/4 cup of mint
1/3 cup of pine nuts
dressing:
2 tablespoons olive oil
2 tablespoons lemon or lime juice
kosher salt
add watermelon and cucumber to a bowl pour dressing over it and mix. add mint and pine nuts and toss again
let chill for an hour before serving
