Chicken in a Roasting Pan

Another original Andrea recipe here folks. Tried and true and delicious! This is a great one to keep warm in a low heat oven as well!

  • 1 Chicken cut into 8ths
  • Italian Salad Dressing
  • Minced Garlic
  • Mesquite Season Salt
  • (any other spices you like)
  • Zuchinni – cut in chunks
  • Yellow Squash – cut in chunks
  • Baby Red potatoes – cut in halves
  • Baby Carrots
  • Mushrooms
  • Onions cut in thick slices and then halved
  • Pour Salad dressing over the pieces

    Sprinkle garlic, salt, etc over the pieces

    Put all the veggies and potatoes over the chicken. Drizzle on a bit more
    dressing and pour about 1/2 Cup water into the side of the pan. Sprinkle with a bit more Mesquite flavoring salt.

    Put the lid on the roaster and cook at 325 for about 1-1/2 hours or until tender. Take off the lid about 20 mins before done to allow chicken to brown.
