2 bags of Success Brown Rice (or one cup of regular brown rice)
1/2 cup of dried cranberries
1 teaspoon of dried lemon peel
1/2 cup of chicken stock
1 tablespoon of margarine
1/2 cup of celery finely chopped
2 tablespoons of shallots, finely chopped
1/2 cup of toasted pecans, chopped
1/4 cup of fresh parsley, chopped
salt and pepper to taste
1 teaspoon of poultry seasoning
Prepare rice according to package instructions.
In a microwave bowl, mix cranberries and orange peel with chicken stock and nuke on high for 2 minutes. Set aside.
Heat a large saucepan over high heat and add margarine. Stir in celery, shallots and poultry seasoning and saute for 3 minutes. Stir in cranberries, orange peel, chicken stock, pecans, parsley and rice and cook over medium heat for 3 minutes or until all liquid is gone. Serves 8.
