Pineapple BBQ Meatballs
Ingredients
Cooking spray
1/4medium yellow onion, finely chopped
2large eggs
1lb.ground beef
1/2c.plain bread crumbs
1/4c.finely sliced scallions, plus more for serving
1tsp.kosher salt
1(20-oz.) can pineapple chunks in juice, plus 2 tbsp. juice
1c.store-bought or homemade BBQ sauce
2cloves garlic, grated
2Tbsp.apple cider vinegar
2Tbsp.reduced-sodium soy sauce
1Tbsp.grated peeled ginger
Directions
Step 1Place a rack in top third of oven; preheat to 400°. Grease a baking sheet with cooking spray. In a large bowl, combine onion, eggs, beef, bread crumbs, scallions, and salt. Using your hands, mix to combine; try to avoid overmixing.
Step 2Form beef mixture into 16 to 18 meatballs about 1 1/2″ diameter. Arrange on prepared sheet.
Step 3Bake meatballs until browned and cooked through, 15 to 20 minutes.
Step 4Meanwhile, in a large high-sided skillet over medium heat, bring pineapple chunks and juice, BBQ sauce, garlic, vinegar, soy sauce, and ginger to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until sauce thickens enough to coat the back of a spoon, about 8 minutes.
Step 5Transfer meatballs to sauce and stir until well coated. Top with scallions.
