Chicken with Zucchini and Tomatoes

What You’ll Need

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breast halves
  • 2 small zucchini, cut into 1/4 inch slices
  • 1 (14-1/2 ounce) can stewed tomatoes
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

What to Do

 

  1. In a large skillet, heat oil over medium-high heat. Add chicken and cook until browned on both sides, about 8 to 10 minutes. Drain off excess fat. Add remaining ingredients.
  2. Reduce heat to low, cover, and cook 10 to 12 minutes, or until chicken is no longer pink in center, stirring occasionally.
