Riviera Chicken
What You’ll Need
4 (4-ounce) boneless skinless chicken breast halves, rinsed and patted dry
1/8 teaspoon salt
1/8 teaspoon black pepper
1 can (14.5-ounce) diced tomatoes with basil, garlic, and oregano
1/2 cup drained, sliced black olives
1 tablespoon finely grated lemon peel
2 cloves garlic, chopped
What to Do
Coat a medium nonstick skillet with cooking spray. Heat to medium-high heat.
Sprinkle chicken with salt and pepper. Place in skillet, cover, and cook 5 to 7 minutes on each side, or until no longer pink. Remove chicken from skillet. Reduce heat to medium.
Add tomatoes, olives, lemon peel, and garlic to skillet. Cook about 4 minutes, or until hot, stirring occasionally. Return chicken to skillet and heat through.
Notes
TIP: When using lemon peel, be sure not to include any of the white pith; it’s very bitte
