Pineapple BBQ Meatballs

Ingredients

  • Cooking spray
  • 1/4medium yellow onion, finely chopped
  • 2large eggs
  • 1 lb.ground beef
  • 1/2 c.plain bread crumbs
  • 1/4 c.finely sliced scallions, plus more for serving
  • 1 tsp.kosher salt
  • 1(20-oz.) can pineapple chunks in juice, plus 2 tbsp. juice
  • 1 c.store-bought or homemade BBQ sauce
  • 2cloves garlic, grated
  • 2 Tbsp.apple cider vinegar
  • 2 Tbsp.reduced-sodium soy sauce
  • 1 Tbsp.grated peeled ginger

Directions

    1. Step 1Place a rack in top third of oven; preheat to 400°. Grease a baking sheet with cooking spray. In a large bowl, combine onion, eggs, beef, bread crumbs, scallions, and salt. Using your hands, mix to combine; try to avoid overmixing.
    2. Step 2Form beef mixture into 16 to 18 meatballs about 1 1/2″ diameter. Arrange on prepared sheet.
    3. Step 3Bake meatballs until browned and cooked through, 15 to 20 minutes.
    4. Step 4Meanwhile, in a large high-sided skillet over medium heat, bring pineapple chunks and juice, BBQ sauce, garlic, vinegar, soy sauce, and ginger to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until sauce thickens enough to coat the back of a spoon, about 8 minutes.
    5. Step 5Transfer meatballs to sauce and stir until well coated. Top with scallions.
