Creamy Crispy Stuffed Onions
What You’ll Need
3 onions, peeled and cut in half horizontally
1 tablespoon canola oil
1/4 cup cream cheese
2 tablespoons sour cream
1 clove garlic, minced
1 teaspoon fresh rosemary, finely chopped
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons Panko bread crumbs
1 tablespoon margarine, melted
1 teaspoon kosher “bacon” bits
What to Do
Preheat oven to 400 degrees F. Place onions cut side up in a 9 x 13-inch baking dish. Drizzle with oil. Bake for 50 minutes. Remove from oven and allow to cool slightly. Carefully remove the center of onion, leaving a shell.
In a small bowl, combine cream cheese, sour cream, garlic, rosemary, salt, and pepper. Evenly spread filling on top and into center hole of onion.
In a small bowl, combine Panko, margarine, and bacon bits. Sprinkle evenly on each onion. Bake 10-15 minutes, or until golden brown.
