Get out those little umbrellas and stick them in your drinks! Slice up some fresh pineapple and make this tropical chicken and you are set!

Tropical Chicken

1 Lrg can Pineapple chunks – chopped up
1 Mango chopped
? C cilantro (fresh chopped)
? C Apricot Preserves or Chutney
2 T Lemon juice
Salt

Mix together and refrigerate

Next mix together

4 T Ketchup
2 tsp olive oil
? tsp oregano
? tsp allspice
1/8 tsp cloves

Rub over chicken and cook chicken under the broiler or better yet, on the BBQ grill! Serve with the salsa that is in the fridge getting cold!
