Chicken with Zucchini and Tomatoes
What You’ll Need
2 tablespoons olive oil
4 boneless, skinless chicken breast halves
2 small zucchini, cut into 1/4 inch slices
1 (14-1/2 ounce) can stewed tomatoes
1/2 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
What to Do
In a large skillet, heat oil over medium-high heat. Add chicken and cook until browned on both sides, about 8 to 10 minutes. Drain off excess fat. Add remaining ingredients.
Reduce heat to low, cover, and cook 10 to 12 minutes, or until chicken is no longer pink in center, stirring occasionally.
