Pesach Cinnamon Apple Sweet Noodle Kugel

Ingredients (11)

Caramelized Apples

  • 3 red apples (cored, peeled, and thinly sliced)
  • 1 and 1/2 tablespoons water
  • 1/4 cup sugar
  • 20 grams (about 1 and 1/2 tablespoons) vegan butter/margarine

Noodle Kugel

  • 1 (12-ounce) package  Passover Egg Noodles
  • 6 eggs
  • 8 tablespoons oil
  • 1 and 1/2 cups sugar
  • 1 teaspoon vanilla sugar
  • 2 teaspoons Ground Cinnamon
  • 2 shakes of nutmeg

Start Cooking

Prepare the Caramelized Apples

  1. In a small saucepan, add the water and sugar. Cook until the sugar dissolves and turns a light amber color (five to seven minutes), then add the vegan butter or margarine.

  2. Stir constantly until the mixture turns a creamy light brown color, and add the sliced apples.

  3. Stir to coat all the apples in caramel and let cook till softened, about 15 minutes. Set aside.

Prepare the Noodle Kugel

  1. Heat up a pot of water till boiling and add one teaspoon salt. Pour in a package of Manischewitz egg noodles and let cook until soft, about 13 minutes. Drain.

  2. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

  3. In a large bowl, add the eggs, oil, sugar, vanilla sugar, cinnamon, and nutmeg. Mix to combine. Add the drained egg noodles and mix once again.

  4. Place silicone muffin liners in a muffin tray or oil a silicone muffin tray (it’s easiest to pop the kugel cups out of silicone!).

  5. Lay a few apple slices in the bottom of each muffin cup and fill to the top with noodle kugel mix.

  6. Bake for 20 to 25 minutes, until set. Let cool slightly before popping out of the muffin trays.

  7. Serve warm with a dusting of cinnamon.
