Heat up a pot of water till boiling and add one teaspoon salt. Pour in a package of Manischewitz egg noodles and let cook until soft, about 13 minutes. Drain.

In a large bowl, add the eggs, oil, sugar, vanilla sugar, cinnamon, and nutmeg. Mix to combine. Add the drained egg noodles and mix once again.
Place silicone muffin liners in a muffin tray or oil a silicone muffin tray (it’s easiest to pop the kugel cups out of silicone!).
Lay a few apple slices in the bottom of each muffin cup and fill to the top with noodle kugel mix.
Bake for 20 to 25 minutes, until set. Let cool slightly before popping out of the muffin trays.
Serve warm with a dusting of cinnamon.
