Skillet Lasagna With Mushrooms (Dairy)

Ingredients (10)

Lasagna

  • 1 tablespoon oil
  • 1 large yellow onion, diced
  • 8 ounces (225 grams) sliced mushrooms
  • 26 ounces (735 grams) Marinara Sauce
  • 2 tablespoons Tomato Paste
  • 1 tablespoon brown sugar
  • 10 Lasagne Noodles
  • 2 and 1/2 cups water
  • 8 ounce (225 gram) mozzarella  thinly sliced

Start Cooking

Make the Lasagna

  1. Heat up a large frying pan or skillet with one tablespoon of oil. Cook onions until transluscent.

  2. Add mushrooms and cook until tender and browned.

  3. Add marinara sauce, tomato paste and brown sugar and combine well.

  4. Break each lasagna noodle into three pieces. Add broken noodles to the sauce. Add the water to the pan, moving around the noodles so they are all covered with water and sauce. Cook until noodles are softened, about ten minutes.

  5. Add thinly sliced mozzarella on top of noodles then cover for an additional five minutes or until mozzarella melts. Serve with fresh basil.

Variation:Swap mushrooms for spinach, thinly sliced peppers, asparagus or your favorite veggies. You can also make this a meat dish by adding ground beef to the mushrooms and removing the final step of mozzarella.
