Zingy Gazpacho

What You’ll Need

  • 3 cups vegetable juice
  • 1 jar (16 ounces) picante sauce
  • 1 medium-sized tomato, diced
  • 1/2 a medium-sized green bell pepper, diced
  • 1/2 a medium-sized cucumber, diced
  • 2 scallions, thinly sliced
  • 1 cup sour cream (optional)

What to Do

 

  1. In a large bowl, combine all the ingredients except the sour cream; mix well. Cover and chill for at least 2 hours, or until ready to serve.
  2. Serve each bowl topped with a dollop of sour cream, if desired.
