Skillet Pizza Snack

What You’ll Need

  • 1 tablespoon chopped fresh bell pepper (red or green)
  • 1 tablespoon sliced fresh mushrooms
  • 1 teaspoon chopped onion
  • 1/3 cup fat-free mozzarella cheese
  • What to Do
  1. Coat a medium nonstick skillet with cooking spray; over medium heat, saute bell pepper, mushrooms, and onion 5 minutes, or until soft. Remove vegetables to a small bowl.
  2. In the same skillet over medium heat, place cheese in center of pan in a 4-inch circle. When cheese starts bubbling, place vegetables  on top.
  3. Cook 30 to 60 seconds, or until cheese is brown on bottom. Using a spatula, slide onto plate, then let cool 1 minute before serving.
