French Toast Rollups

  • White sandwich bread
  • Softened cream cheese
  • Diced strawberries
  • Eggs
  • Milk
  • Vanilla extract
  • Sugar
  • Cinnamon
  • Unsalted butter

HOW TO MAKE FRENCH TOAST ROLL UPS:

  • To start, cut the crusts off of the sandwich bread and then flatten slightly with your hands or a rolling pin.
  • Spread some softened cream cheese onto each piece of bread, followed by the strawberries. Roll the bread tightly and place seam-side down onto a pan or plate. Repeat with rest of slices.
  • In a small bowl, whisk eggs, milk and vanilla. In another shallow bowl, whisk sugar and cinnamon.
  • Melt butter in a large skillet over medium heat. Working one at a time, dunk one roll up completely into egg mixture and then place onto buttered skillet. Repeat with rest of roll ups. Cook for about 2 minutes on all four sides, or until golden.
  • Once golden, dunk immediately into cinnamon sugar mixture and them move to a separate plate.
