What You’ll Need
1/2 cup Dijon mustard
1/4 cup vegetable oil
1/4 cup lemon juice
1 teaspoon chopped fresh dill
4 boneless, skinless chicken breast halves (1-1/2 pounds total)
What to Do
In a large bowl, combine mustard, oil, lemon juice, and dill. Add chicken breasts, turning to coat completely; cover and chill about one hour.
Coat a grill pan or skillet with cooking spray and heat over medium heat until hot. Place chicken on pan; discard excess marinade.
Cook 5 to 6 minutes per side, or until chicken is no longer pink.
