Cheesy Cauliflower

What You’ll Need

  • 1/4 cup (1/2 stick) butter
  • 1 tablespoon all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup reduced-fat milk
  • 2 cups (8 ounces) shredded sharp Cheddar cheese
  • 2 (16-ounce) packages frozen cauliflower florets, thawed

What to Do

  1. In a large saucepan over medium-heat, melt butter. Add flour, salt, and cayenne pepper; mix well.
  2. Stir in milk and cheese; heat until cheese is melted.
  3. Add cauliflower and stir until well combined. Simmer over low heat for 8 to 10 minutes, or until heated through.
