Mom’s Fruit Noodle Kugel

Ingredients:1 pound wide noodles, cooked until al dente and well drained
6 eggs, separated
3/4 cup sugar, separated
1 large can fruit cocktail, drained
1 cup raisins
6 large apples, peeled and sliced
1/2 pound of margarine, melted
2 teaspoons vanilla extract
1 teaspoon cinnamon

Directions:

Preheat oven to 350 degrees. Grease a large (9 x 13-inch) baking pan.

Set aside 2 tablespoons margarine for topping.

Place the noodles into large mixing bowl and combine with fruit cocktail, raisins, apples and melted margarine.

Beat the egg yolks until thick; slowly add the sugar mixture and beat until the mixture is light and fluffy. Beat in the vanilla extract. Stir the egg yolk mixture into the noodles.

Using a clean bowl and beaters, beat the egg whites until foamy. Fold into the noodle mixture.

Place into large  greased pan. Spread the remaining 2 tablespoons melted margarine over top and sprinkle with cinnamon.

Bake for 1 hour.

Notes:

Yield: Cut into squares and serves. Serves a large crowd, depending on serving size (at least 12).
