Veggie Chili Diabetic Safe

What You’ll Need:
  • 1 tablespoon canola oil
  • 1 zucchini, cut in 1/2-inch chunks
  • 1 summer squash, cut in 1/2-inch chunks
  • 1 red bell pepper, cut in 1/2-inch chunks
  • 1 onion, slivered
  • 2 cans red kidney beans, rinsed and drained
  • 1 (14-ounce) can no-salt-added stewed tomatoes
  • 3/4 cup salsa
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
What To Do:

1. In a large soup pot, heat oil over medium high heat. Add zucchini, squash, red bell pepper, and onion, and cook 5 minutes, stirring occasionally. Add the remaining ingredients and cook 25 to 30 minutes, or until vegetables are tender, stirring occasionally.
