What You’ll Need:
- 1/2 cup rolled oats
- 1/4 cup margarine, softened
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup plain low-fat yogurt
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cup all-purpose flour
- 1 cup sugar-free chocolate chips
What To Do:
- Preheat oven to 375 degrees F. Place oats in a food processor or blender. Cover and process until ground; set aside.
- In a large mixing bowl, beat margarine, brown sugar, baking soda, and salt with an electric mixer until combined. Beat in yogurt, eggs, and vanilla. Add flour and mix until combined. Using a wooden spoon, stir in oats and chocolate chips.
- Drop dough by rounded teaspoons on an ungreased cookie sheet. Bake for 9 to 11 minutes, or until bottoms are browned. Transfer to a wire rack to cool.
