Yield: serves 4
4 ripe large bananas
1 cup blueberries (frozen works great!)
1 cup matzo meal
1 cup water
1 1/2 tsp. oil
Mash bananas in large bowl, add all other ingredients except oil. Mix well. In a large skillet, heat oil. Divide batter into eight parts, scoop out into pan to form pancakes. Bake 15 minutes on one side, 10 on the other. Serve!
