When we do an appetizing menu, we make sure to only use products from Acme Smoked Fish. The Kof-K ensures the kashruth, and the company ensures the quality and the great taste. Let’s look at their line-up:

ACME SMOKED SALMON

Four generations of experience and commitment to quality go into every piece of salmon that Acme cures and smokes. All Acme smoked salmon products are kosher. They include:

Farm-raised Atlantic Salmon and Wild Pacific King Salmon which are also known as Nova, Nova Salmon, Eastern and Gaspe, are our most popular smoked fish varieties. Acme cures the salmon in a mild salt and brown sugar brine for up to one full week before cold smoking it (not cooking), over a blend of fruitwoods for up to 24 hours. The result is a mildly smoky and slightly salty flavor and a silky texture that practically melts in your mouth. Acme Smoked Salmon is available in a wide range of sizes and packages including whole or trimmed sides, pre-sliced sides, exact weight vacuum-sealed packages and even in snack-sized pieces or ground.

Scottish – Flown in from Scotland exclusively for Acme, this Atlantic Salmon is smoked slowly and for long hours to produce a more intense smoke flavor than smoked salmon varieties. Available fully trimmed or pre-sliced.

Irish Smoked Salmon is prepared from farm-raised Atlantic Salmon which is smoked in Ireland exclusively for Acme.

Norwegian – These robust Atlantic Salmon are cured with a dry rub of salt and sugar then carefully smoked in Norway before being flown in for our customers.

Kippered – Also known as baked or hot smoked salmon, Acme Kipped Salmon is brine cured and then smoked at a higher temperature than cold smoked salmon. The result is a moist, flaky fish with a delicate smoke flavor. Acme Kippered Salmon is available whole, in sides or in boneless 5 lb. portions. We also offer a Honey-Baked version and ready-to-eat Kippered Salmon Salad.

Lox – Brine cured in the traditional method, Acme lox are delightfully salty and flavorful. Available to retailers in trimmed or pre-sliced sides, belly lox or in 3-ounce vacuum sealed, exact-weight packages.

Gravad Lax – This traditional Scandinavian style salmon, also known as “Gravlax,” is cured in a dill-flavored marinade for several days imparting a remarkable flavor. Acme Gravad Lax is available in whole and pre-sliced sides, as well as exact-weight, 4-ounce packages.

Pickled Lox – Acme’s Pickled Lox is made from high-quality Wild Alaskan King Salmon. Available in cream or wine sauce varieties for food service as well as 7-ounce retail-ready size packages.
