This one is a crowd pleaser!
2 cups water
2/3 cup of uncooked, quick cooking barley
2 cups of diced, cooked chicken
1/2 cup diced celery
1/2 cup of chopped tomatoes
1/2 cup of chopped red onion
2 Tablespoons of fresh squeezed lemon juice
1 Tablespoon of Dijon mustard
5 lettuce leaves
Serves 5
Bring water to vigorous boil and medium saucepan over high heat. Stir in barley, return to boil. Reduce heat and let simmer for 8 to 10 minutes or until done (barley is tender). Stir from time to time. Drain if needed. Cool. Toss barley with remaining ingredients except lettuce leaves.
Serve on the lettuce
