Osem is a Nestle company. The make an amazing pearl couscous. What makes it so incredible?
The couscous is toasted in an open flame oven. Toasting allows the couscous to absorb liquid without falling apart. It has a unique rich and nutty flavor. It is chewy, with a smooth, almost buttery mouth feel. Due to its pearl size, it picks up herbs and spices very nicely.
This is the best couscous we have ever tried. It is a winner!
RECIPE
Osem Pearl Couscous- Citrus Salad
Dressing for the salad
EVOO 3/4 cup
OJ 1/2 cup
Zest of one lemon
Zest of one lime
Honey 1 Tablespoon
1/4 large shallot
Salt
Freshly ground white pepper
The Salad
Osem Pearl Couscous 1 1/2 cups
2 Oranges Supremed
Fresh chives, cross minced 1/3 cup
Chopped Pecans 1 cup
Brown Sugar 1 Tablespoon
Citrus Vinaigrette 3/4 cup
Dried Cranberries 1 cup
EVOO 3 Tablesppons
Saute the couscous for one minute in EVOO, add 1 3/4 cups of water, bring to a boil, cover and simmer for 10 minutes. Remove the couscous from the pan, mix well with 3 Tablespoons of EVOO and let cool. In a blender, add all the ingredients for the vinaigrette EXCEPT for the salt and pepper. Blend for 10 seconds. Season to taste with salt and pepper. When the couscous has completely cooled, toss with supremed oranges, chives, pecans, cranberries, brown sugar, and vinaigrette dressing. Serve chilled. Enjoy!
