Subject: Bisra LLC – open for business!
Shalom Shalom to all!
After 10 long months of construction, we are proud to announce at last that Bisra LLC is officially open for business!
We have been busy designing and renovating the facility, sourcing livestock from local (and not-so-local) growers, and consulting with experts in fields from animal husbandry to meat processors, and from refrigeration to sausage makers. Our website is currently under construction, and we hope to launch it soon.
The below price list reflects what we currently have in stock. Please bear in mind that the prices depend on the market, and are subject to change based on size (e.g. juvenile vs. mature), yield, and seasonal availability.
Our goal is to offer the best kosher meat available and the most seasonally appropriate items based on the life cycle of the farm animals and the often complex logistics of the market. The quality of the meat speaks for itself, and the hard work that goes into finding the right animals at the right time and properly handling the meat will be immediately recognizable to the most discerning palate.
Front Half Cuts: (please specify if you have a preference for front-half or back-half meat)
Veal chops (ribs), bone-in (these weigh around 0.5 lbs. each, and are very tender, albeit somewhat smaller than beef ribs): $14/lb.
Veal shank, bone-in (the authentic osso buco cut): $10/lb.
Veal neck, bone-in: $10/lb.
Veal spareribs: $10/lb.
Veal brisket, boneless (smaller and more tender than beef brisket): $10/lb.
Back Half Cuts: (please specify if you have a preference for front-half or back-half meat)
Veal sirloin chops (or whole roast), bone-in: $12/lb.
Veal thigh and shank meat, boneless (these make beautiful roasts and are excellent cholent meat) $10/lb.
Ground veal (from back leg meat): $6/lb.
Marrow bones: $2.50/lb.
