Spicy Baked Salmon and Apples

1 Granny Smith apple
4 skinless salmon fillets (4 ounces each)
1 teaspoon cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon each salt and pepper
Heat oven to 400 degrees. Wash and thinly slice unpeeled apple. Place each fillet on a 12- by 12-inch square of foil. Sprinkle with cinnamon and cumin. Top each with apple slices, salt and pepper. Fold and seal packets, and place on a baking sheet. Bake until salmon is cooked through, about 15 minutes.
Active time: 5 minutes.
Total time: 20 minutes.
