The UTJ maintains a test kitchen way down South in Austin, Texas. It is there that Chef Andrea Herrera comes up with so many of the recipes that we run from time to time. Andrea is a superior chef and an amazing baker, too. She is very artistic and we are always amazed at how she turns a plain, round cake into a work of incredible art.
Due to the fact that Austin is in Texas, people here tend to eat a lot of Tex-Mex food. Frankly, we love it! Oh, sure we have had fajitas at home in NYC, but, frankly, we do not make them all that well. Chef Andrea, on the other hand, makes fajitas to die for. We are talking, “taste bud O boy!”
The other night we had a meal that was a cross between an enchilada and a burrito. Somewhat weird looking, but O my, how wonderful for the taste buds!
While we are here, we are watching Chef Andrea come up with new recipes that will grace the blog in the weeks ahead. Stay tuned………….
