GREEK TOMATOES STUFFED WITH CHOPPED MEAT

GREEK TOMATOES STUFFED WITH CHOPPED MEAT

12 soft tomatoes
1 ½ pounds of chopped meat
1 cup chopped walnuts
¾ cup matza meal
1 tablespoon chopped parsley
1 egg
1 can tomato paste
1 can tomato sauce
½ teaspoon salt
½ teaspoon pepper
½ teaspoon onion powder
oil
10x12x4 inch baking pan

Coat the pan with oil.

Slice off the tops of the tomatoes and scoop out center. Set aside the stuff you scooped out. Take the juice from the scooped out part and put it in a bowl with meat, tomato paste, walnuts, matza meal, egg, salt, pepper, onion powder and parsley. Mix it well.

Stuff the tomatoes with the mixture and put the sliced off top back on the tomato. Turn the whole thing upside down and put it in the baking pan. Pour the can of tomato sauce over the whole thing. Add a little oil to the sauce.

Bake for 2 hours at 350 degrees, or until the liquid evaporates and the tomatoes are browned on top.
