CHOPPED VEGGIE SALAD

INGREDIENTS:
4 zucchini, cut into 1/2-inch pieces
4 yellow squash, cut into 1/2-inch pieces
24 ounces cherry tomatoes
4 tablespoons fresh lemon juice
4 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 cup fresh mint, chopped
DIRECTIONS:
Combine the zucchini, squash, tomatoes, lemon juice, oil,
salt, pepper, and mint in a large bowl. Let sit for 10
minutes before serving.
