Best Passover Apple Kugel
6 matzos
12 eggs, separated
1 cup sugar
3 Tablespoons cinnamon
12 grated apples (nice sweet apples work best)
1/2 cup melted margarine
Cinnamon Sugar
Break matzot into small pieces in a colander. Soften with warm water.
In a separate bowl, mix egg yolks, sugar, cinnamon, apples and
margarine. Mix in matzot. Whip egg whites until stiff. Fold into the
matzo mixture. Place in greased or sprayed baking dish. (a 13 inch pyrex
works well or a aluminum pan of similar size) Top with cinnamon sugar. Bake
at 350° for about 45 minutes.
