It is never too early to “audition” a new Pesach recipe. For those of you who do eat gebrokts, here is one we like:
Yield: 8 Latkes
3 eggs
1 Tbl. melted butter
1/2 tsp. salt
1/4 tsp. cinnamon
3 Tbl. cottage cheese
2 cups matzo farfel
1/2 cup hot milk
In medium bowl beat eggs. Add butter,seasoning and cheese. Mix. Moisten farfel with hot milk. Stir into egg mixture. Drop by Tbl. on well greased frying pan. Fry until brown.
