Apple pear salad with lemon poppy seed dressing:
1 16oz pkg of romaine lettuce thoroughly washed
1 6oz block Swiss cheese, shaved
1 cup roasted, salted cashews
1/2 cup dried, sweetened cranberries
1 large apple, thinly sliced
1 large pear, thinly sliced
Toss all ingredients in a large bowl. Pour on the lemon poppy dressing.
Lemon Poppy dressing:
2/3 cup light olive oil
1/2 cup sugar
1/3 cup fresh lemon juice
1 1/2 TBSP poppy seeds
2 tsp finely chopped onion
1 tsp Dijon mustard
1/2 tsp salt
Process the oil and the other ingredients in a blender until smooth. Store in an airtight container in the fridge up to one week. Serve at room temperature.
