Ok, so it’s not a crazy person. Go know it’s a dessert. Gosh, and what a dessert it is. Once you have had Bananas Foster, you have seen the fabled castle in the sky. Or, as they say in New Orleans: They ain’t nuttin like it, honeychild!
We found a simple recipe in the pages of Southern Living (Sept. 06). We tried it. We are in culinary heaven…………..
4 medium sized ripe bananas
1/2 cup butter
1 cup firmly packed brown sugar
1/4 cup banana liquer
1/2 cup rum
Some really good vanilla ice cream
Cut bananas in half crosswise. Cut each half in half lengthwise. Melt butter in a large skillet over medium high heat. Add brown sugar and cook, stirring constantly for 2 minutes.
Add bananas to skilet and remove from heat. Stir in the liquer and rum. Carefully ignite the fumes just above the mixture with a long match or a long multi purpose lighter. Let the flames die down.
Return the skillet to heat and cook 3 to 4 minutes or until bananas are soft and start to curl ever so slightly. Remove from heat. Serve banana mixture over vanilla ice cream.
Prepare to make funny sounds indicative of gastronomic joy!
