Here’s a cheesecake that you can write home to mom about! This one also freezes very well! Enjoy!
Chocolate Chip Cheesecake
2 Cups finely crushed chocolate creme filled cookies
1/2 Cup melted margarine or butter
24 oz Cream Cheese – softened
1 – 14 oz can Sweetened Condensed Milk
3 Eggs
2 tsp vanilla
1-1/2 Cups MINI Chocolate Chips
1 tsp flour
Preheat oven to 300 degrees. Combine crushed cookies and margarine
and pat firmly on the bottom of a 9 inch springform pan.
In large mixer bowl, beat cheese until fluffy. Add sweetened
condensed milk, beat until smooth. Add eggs and vanilla, mix well. In
small ziploc bag toss together 1/2 of the mini chips with the flour to
coat well. (this keeps the chips from sinking to the bottom). Stir chips
into cheese mixture. Pour into prepared pan. Spinkle remaining chips
evenly over the top. Bake 1 hour or until cake springs back when lightly
touched. cool to room temp and chill.
