STUFFED FRENCH TOAST

We saw this recipe and decided that
it looked pretty neat. We were too lazy to try it, so we asked a friend
to cook some for us and invite us over. First conclustion: Our friends
are not as close as we thought they were. It took several friends to
get one to agree. Second conclusion: this stuff really is good!

It is best if you can get pre-sliced French toast bread (it is thick sliced), but if not, slice challah thickly.

6 ounces of cream cheese
3 tablespoons of sugar
1/4 teaspoon of cinnamon
8 slices of bread
1 large egg
1 cup of cold water
1/2 cup all purpose flour
1 teaspoon of vanilla extract
4 tablespoons of unsalted butter
Maple syrup for the table

Combine
cream cheese, sugar and cinnamon in a medium bowl. Spread the mixture
on four slices of bread. Top with the remaining four slices of bread.
Press down gently on each one. Combine egg, water, flour and vanilla in
a shallow pie plate. Melt two tablespoons of butter in a large
non-stick skillet over medium heat. Dip both sides of two of the
sandwiches in batter and place in skillet. Cook until deep golden brown
on both sides (about three minutes per side). Repeat with the other two
sandwiches and the butter.

Cut into triangles and serve immediately with the maple syrup.
