Ok, now we all know everyone loves sweet potatoes with marshmallows right? Here’s my twist on the recipe.

3 large cans of Sweet Potatoes (or the same amount of fresh cooked and cubed sweet potatoes)
1 stick parve margarine (melted)
1/2 cup maple syrup
1 large can crushed pineapple
1 cup packed brown sugar
Kosher marshmallows
In a large caserole add the drained sweet potatoes and undrained crushed pineapple. In another bowl mix together margarine, syrup and brown sugar. Pour over the potatoes and GENTLY mix together. Bake in a 325 degree oven, until very hot. Last but not least, right before serving, top the potatoes with marshmallows and put under the broiler for a minute or so. Watch carefully, otherwise they will turn black. You want them just a nice shade of brown.
